These refreshing tacos are a marriage of juicy and tender mahi mahi, zesty lime, and an irresistible tropical salsa that will leave you craving more.
Mahi mahi, also known as dolphinfish, has a fascinating background deeply rooted in Hawaiian culture. Revered by ancient Hawaiians for its sleek beauty and swift swimming abilities, the mahi mahi symbolizes strength and grace. Today, it continues to be a prized catch in Hawaiian waters and a culinary delight.

 

 

Pat the mahi mahi dry and season with salt, pepper, lime juice from ½ lime, and a drizzle of olive oil. Set aside.
In a medium bowl, mix the remaining lime juice with the pineapple, onion, cilantro, and jalapeno. Season the salsa with salt and pepper to taste, and adjust the other seasonings according to your preferences.
Heat a large grill pan or skillet over medium-high heat and spray with nonstick cooking spray. Cook the mahi mahi for 3-4 minutes on each side until it flakes easily with a fork.
Place the cooked fish onto the warmed tortillas. Top the tacos with the pineapple salsa and your choice of add-ons, such as avocado, hot sauce, and extra chopped cilantro.
Serve immediately with lime wedges on the side.
